5 Ingredient Black Bean Chowder (GF)

Serves 4

Ingredients: 
  • 1 cup cooked ham, cut into 1/2 inch cubes
  • 1 medium onion, chopped
  • 2 (15oz) cans Black Beans, undrained
  • 1 (14.5oz) can diced tomatoes, undrained
  • 1 teaspoon chili powder

Instructions: 
  • Spray large nonstick saucepan with nonstick cooking spray. Add ham and onion; cook over medium heat for 4-6min or until onion is tender, stirring occasionally.
  • Stir in remaining ingredients. Bring to a boil. Reduce heat to medium-low; simmer 20 minutes or until slightly thickened.
  • If desired, garnish each serving with a few crushed baked tortilla chips.
