Adult S'Mores Dessert

Delicious adult-version of a classic childhood treat!
If you don't have a kitchen torch, just leave the marshmallow un-browned.

Time: 1 hour, plus chilling time

Ingredients: 
Crust: 
  • 4 cups crushed graham cracker crumbs (1-13.5oz box)
  • 1 cup butter, melted (2 sticks)
  • 2 Tablespoons granulated sugar
Filling: 
  • 6 large egg yolks
  • 1 cup, plus 2 Tablespoons powdered sugar, sifted
  • 1 1/2 Tablespoons Cognac or brandy
  • 1 1/2 Tablespoons white creme de cacao
  • 1 1/2 Tablespoons Kahlua
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 3/4 cup butter (1 1/2 sticks)
  • 1 1/2 Tablespoons cocoa powder
  • 9 ounces semisweet chocolate, finely chopped
  • 1 cup, plus 2 Tablespoons heavy cream, whipped to soft peaks
Topping: 
  • 6 large egg whites
  • Pinch of salt
  • Pinch of cream of tartar
  • 1/2 teaspoon vanilla extract
  • 2 cups marshmallow Fluff

Instructions: 
Make Crust:
  • Preheat oven to 350F. 
  • Mix graham cracker crumbs with butter and sugar until combined. 
  • Press into the bottom of a 9x13" baking pan.
  • Bake 10 minutes, or until crust starts to brown. 
  • Let cool.

Make Filling: 
  • Beat the egg yolks and powdered sugar in a large bowl until well combined. 
  • Beat in the alcohols, vanilla and salt. 
  • Melt the butter in a medium saucepan over low heat and whisk in the cocoa powder until smooth. 
  • Remove from heat and add the chocolate.  Stir until chocolate is melted and mixture is smooth. 
  • Let cool slightly, then beat into the egg mixture. 
  • Fold the softly beaten heavy cream into the chocolate mixture and spoon evenly over the crust.
  • Cover with plastic wrap and refrigerate at least 4 hours (or overnight)

Make Meringue when ready to serve: 
  • Using an electric mixer, beat the egg whites until foamy. 
  • Add salt and cream of tartar and beat until soft peaks form.  
  • Add vanilla and beat until combined. 
  • Add the marshmallow fluff to the egg whites a little at a time until stiff peaks form.

Serve: 
  • Cut dessert into 15 squares.  
  • Serve on a plate, topped with a large dollop of meringue.
  • Using a kitchen torch, carefully toast the meringue until browned.
  • Serve immediately
