Asian Cabbage Salad

DIETS: LC GF VG VT
Servings: 6 (as a side)

​Ingredients: 
  • 3 cups shredded red cabbage
  • 3 cups shredded Napa cabbage
  • 1 red bell pepper, thinly sliced
  • 3 scallions, thinly sliced
  • 1 cup edamame, shelled
  • 1/4 cup finely chopped fresh cilantro
  • 2 Tablespoons finely chopped fresh mint
  • 1 Tablespoon sesame seeds
  • 1/2 cup Sesame Miso Dressing:
    • 2 Tablespoons miso
    • 1 Tablespoon tahini
    • 3 Tablespoons rice vinegar
    • 1 Tablespoon tamari or soy sauce
    • 1 Tablespoon Grade B maple syrup
    • 1 Tablespoon freshly squeezed lime juice
    • 1 teaspoon freshly squeezed lemon juice
    • 2 teaspoons grated fresh ginger

Instructions: 
  • Mix all dressing ingredients together in a small bowl, whisk well, and set aside.
  • Add all salad ingredients together in a large bowl and toss to combine.  
  • Drizzle salad with dressing and toss well to coat. Let sit for a few minutes so cabbage can soak up the dressing.
