Asian Cole Slaw (V)

Servings: 6 (as a side)

​Ingredients: 
  • 1 10oz bag angel hair cole slaw
  • 1/4 cup sliced scallions
  • 1 package (3oz) plain ramen noodles, lightly broken (discard the seasoning packet)
  • 2 Tablespoons sesame seeds
  • 3 Tablespoons slivered almonds (toasted, if desired, but not necessary)
  • 2 Tablespoons sunflower seeds
  • Asian Dressing:
    • 1/2 cup canola oil
    • 1 Tablespoon soy sauce
    • 1/4 cup sugar
    • 1/4 cup red wine vinegar
    • Salt & Pepper, to taste

Instructions: 
  • Mix all dressing ingredients together in a small bowl, whisk well (until sugar is dissolved), and set aside.
  • Add all salad ingredients together and toss to combine.  
  • Drizzle salad with dressing and toss well to coat.  **Add the dressing just before serving to ensure ramen noodles stay crunchy**
