Asian Rice Pilaf

Ingredients: 
  • 1 Tablespoon sesame oil
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 3/4 cup broth (beef, chicken or veggie work!)
  • 1 cup uncooked long grain white rice
  • 1 Tablespoon tamari or soy sauce
  • 1/8 teaspoon red pepper flakes
  • 1/3 cup scallions, chopped
  • 1/3 cup red pepper, diced
  • 2 Tablespoons sesame seeds (toasted if desired)

Instructions: 
  • Heat oil in a medium saucepan over medium heat.
  • Add onion and garlic and saute until tender (5-8 minutes).
  • Add broth, rice, soy sauce and pepper flakes and bring to a boil.
  • Reduce heat to medium-low, cover, and cook until rice is tender and liquid is absorbed (about 15 minutes).
  • Stir in scallions, red pepper and sesame seeds, cover and let sit 5 minutes.
  • Fluff with fork and serve immediately!
