2 small shallots, peeled and sliced into thin strips (about 1/4 cup)
1/2 inch cube fresh ginger, peeled and grated (about 1 teaspoon)
2 Tablespoon olive oil
1 Tablespoon mirin
1 Tablespoon tamari/soy sauce
1 Tablespoon roasted sesame seeds
Instructions:
Heat olive oil in a small skillet/saucepan over medium heat.
Add shallots and sauté until they are golden and crisp (watch carefully as they burn easily).
Remove pan from heat and add ginger to the pan. Stir and let it cook in the hot oil for 15-30 seconds.
Add the mirin and tamari and mix well.
Pour over roasted veggies and then sprinkle with sesame seeds
