Asparagus Au Gratin

DIETS: LC KT VT
Serves: 4
Time: 25 minutes

Ingredients: 
  • 1 1/2 pounds fresh asparagus
  • 3 Tablespoons butter
  • 2 Tablespoons flour
  • 1/2 cup asparagus cooking water
  • 1/4 cup heavy cream
  • Salt & Pepper, to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 1 Tablespoon garlic flavored bread crumbs

Instructions: 
  • Preheat broiler.
  • Cut woody bottoms off asparagus.
  • Chop asparagus into bite-size pieces. Add to a pot of salted boiling water and cook for 3 minutes. Drain (BUT KEEP COOKING WATER) and place in the bottom of a greased baking dish.
  • In a small saucepan, melt the butter over medium heat. Add the flour and whisk until blended.
  • Add reserved cooking water and cream and whisk until thickened and smooth. Season with salt & pepper and pour over asparagus.
  • Sprinkle with cheese and then bread crumbs. Put under broiler for a few minutes until top is golden brown.
