Cook bacon in olive oil until crispy. Remove from pan and chop.
Pour off all but 1 Tablespoon of bacon grease and add chicken stock, milk and peas to the pot. Bring to a boil.
Whisking constantly, gradually add the polenta and cook until polenta has thickened (2-3min).
Season polenta with salt and pepper and stir in the Parmigiano and bacon.
Serve immediately.
