Bacon Pea Polenta

Ingredients: 
  • 1 Tablespoon Olive Oil
  • 4 strips bacon
  • 1 1/2 cups Chicken Stock
  • 1 1/2 cups whole milk
  • 10 oz pkg frozen peas
  • 1 cup quick cooking polenta
  • 1 cup Parmigiano-Reggiano, grated/shredded

Instructions: 
  • Cook bacon in olive oil until crispy. Remove from pan and chop.
  • Pour off all but 1 Tablespoon of bacon grease and add chicken stock, milk and peas to the pot. Bring to a boil.
  • Whisking constantly, gradually add the polenta and cook until polenta has thickened (2-3min).
  • Season polenta with salt and pepper and stir in the Parmigiano and bacon.
  • Serve immediately.
