Seasonings & cream cheese (like a sprinkle of cinnamon with strawberry cream cheese; or everything bagel seasoning with garlic & herb cream cheese)
Preheat oven to 400F. Line a cookie sheet with parchment paper.
In 1 bowl, combine almond flour, xanthan gum, baking powder and salt. Mix well and set aside.
Add mozzarella and cream cheese to a separate bowl and microwave on high for 1 minute. Stir and continue heating 30 seconds at a time until everything melts and it makes a smooth batter (2-3 times).
Add cheese mixture into dry mixture and mix well (use hands if necessary).
Whisk egg and add that to batter as well, mixing well (again - use hands if necessary - if batter is too sticky, oil hands beforehand).
Roll into 10 balls, brush with melted butter and sprinkle with seasoning of choice.
Bake for 15-20 minutes or until golden brown and cooked through. Serve with cream cheese dip of choice.
