Bagel Bites

DIETS: GF KT VT

Time: 40 minutes

Ingredients:
  • 1 cup fine almond flour
  • 1 teaspoon xanthan gum
  • 2 teaspoons baking powder
  • Pinch of salt
  • 2 cups shredded mozzarella
  • 3 ounces cream cheese
  • 1 egg
  • 2 Tablespoons butter, melted
  • Seasonings & cream cheese (like a sprinkle of cinnamon with strawberry cream cheese; or everything bagel seasoning with garlic & herb cream cheese)

Instructions:
  • Preheat oven to 400F. Line a cookie sheet with parchment paper.
  • In 1 bowl, combine almond flour, xanthan gum, baking powder and salt. Mix well and set aside.
  • Add mozzarella and cream cheese to a separate bowl and microwave on high for 1 minute. Stir and continue heating 30 seconds at a time until everything melts and it makes a smooth batter (2-3 times).
  • Add cheese mixture into dry mixture and mix well (use hands if necessary).
  • Whisk egg and add that to batter as well, mixing well (again - use hands if necessary - if batter is too sticky, oil hands beforehand).
  • Roll into 10 balls, brush with melted butter and sprinkle with seasoning of choice.
  • Bake for 15-20 minutes or until golden brown and cooked through. Serve with cream cheese dip of choice.
