Baked Artichoke Dip (GF)

Serves 4
Approximately 130 calories can be shaved off per serving if light or non-fat versions of the cream cheese, mayo and sour cream are used! 

Ingredients: 
  • 4 slices bacon
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces cream cheese, softened
  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1/4 cup Parmesan cheese, freshly grated
  • 1 (15oz) can artichoke hearts, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Dippers of choice: fresh vegetables, crackers, pita bread, etc.

Instructions: 
  • Preheat oven to 350F.
  • Grease a 6-cup baking dish with cooking spray
  • Cook bacon in skillet over med-high heat until crisp.  Remove to a paper towel-lined plate to cool and then break/chop into small pieces.  (Reserve bacon grease)
  • Return skillet to med-high heat and add onion and garlic to bacon grease and cook until soft and beginning to brown (about 5 minutes).  Remove from heat and set aside. 
  • Mix cream cheese, mayo, sour cream and Parmesan in a large bowl.  
  • Add bacon, onion mixture, artichokes, salt & pepper and mix well. 
  • Transfer to baking dish and smooth the top with a spoon or spatula. 
  • Bake until bubbling and top is starting to brown a little (about 30 minutes). 
  • Serve hot with dippers of choice.
