Serves 4 Approximately 130 calories can be shaved off per serving if light or non-fat versions of the cream cheese, mayo and sour cream are used!
4 slices bacon
1 onion, chopped
3 cloves garlic, minced
8 ounces cream cheese, softened
1/4 cup mayo
1/4 cup sour cream
1/4 cup Parmesan cheese, freshly grated
1 (15oz) can artichoke hearts, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
Dippers of choice: fresh vegetables, crackers, pita bread, etc.
Preheat oven to 350F.
Grease a 6-cup baking dish with cooking spray
Cook bacon in skillet over med-high heat until crisp. Remove to a paper towel-lined plate to cool and then break/chop into small pieces. (Reserve bacon grease)
Return skillet to med-high heat and add onion and garlic to bacon grease and cook until soft and beginning to brown (about 5 minutes). Remove from heat and set aside.
Mix cream cheese, mayo, sour cream and Parmesan in a large bowl.
Add bacon, onion mixture, artichokes, salt & pepper and mix well.
Transfer to baking dish and smooth the top with a spoon or spatula.
Bake until bubbling and top is starting to brown a little (about 30 minutes).
Serve hot with dippers of choice.
