4 Catfish fillets (or can substitute tilapia or other fish)
Salt/Pepper
1/4 cup Dijon mustard
1 Tablespoon melted butter
1/2 cup dry bread crumbs
1/2 cup ground pecans
Nonstick cooking spray
Instructions:
Preheat oven to 475F.
Pat fillets dry and sprinkle with salt & pepper.
Place fillets on greased baking sheet (rounded side up).
Brush each fillet with 1 Tablespoon mustard.
Mix butter, bread crumbs and pecans in a small bowl.
Top each fillet with equal amounts of crumb topping (pressing firmly to make as much stick as possible).
Spray tops of fillet with cooking spray.
Bake for 13-15 minutes, or until fish is done in the middle and topping is browned.
