Baked Pecan-Dijon Fish

Time: 35 Minutes

Ingredients:
  • 4 Catfish fillets (or can substitute tilapia or other fish)
  • Salt/Pepper
  • 1/4 cup Dijon mustard
  • 1 Tablespoon melted butter
  • 1/2 cup dry bread crumbs
  • 1/2 cup ground pecans
  • Nonstick cooking spray

Instructions: 
  • Preheat oven to 475F.
  • Pat fillets dry and sprinkle with salt & pepper.
  • Place fillets on greased baking sheet (rounded side up).
  • Brush each fillet with 1 Tablespoon mustard.
  • Mix butter, bread crumbs and pecans in a small bowl.
  • Top each fillet with equal amounts of crumb topping (pressing firmly to make as much stick as possible).
  • Spray tops of fillet with cooking spray.
  • Bake for 13-15 minutes, or until fish is done in the middle and topping is browned.
