Baked Salmon with Dill Sauce (GF)

Serves 4

Ingredients: 
Salmon:
  • 4 - 6 ounce salmon fillets
  • 2 Tablespoons extra virgin olive oil
  • 2 Tablespoons fresh lemon juice
  • Salt and pepper
Sauce:
  • 1/3 cup fat free plain Greek Yogurt
  • 3 Tablespoons mayonnaise (gluten-free if needed)
  • 1 clove garlic, finely minced
  • 1 Tablespoon chopped fresh dill
  • 2 teaspoons milk
  • 1/2 teaspoon honey
  • Salt and pepper, to taste

Instructions: 
  • Preheat oven to 400F. 
  • In a bowl, whisk together olive oil, and lemon juice.  
  • Grease a 13x9" baking pan and place salmon fillets in pan. Season bottoms with salt and pepper, the flip over.
  • Drizzle tops evenly with lemon mixture and gently rub over salmon, then season tops with salt and pepper.  Let rest at room temp 10 minutes, then bake for 12-16 minutes, or until salmon has cooked through.  
  • For Sauce: 
    • In a bowl, mix together Greek yogurt, mayo, garlic, dill, honey, and milk.  
    • Season with salt and pepper to taste.
  • Serve salmon fillets warm topped with sauce.
