Add all ingredients except honey in a medium saucepan.
Bring to a boil, then reduce heat to medium-low, cover loosely and let simmer for 40-50 minutes.
Strain out solids and add honey, stir to combine.
Drink immediately, or can be refrigerated for up to 2 days. (If drinking cold, some sediment may fall to the bottom, just stir it up again prior to drinking)
