Barley Water

DIETS: LC VG VT
Serves 2
Time: 1 hour

Ingredients: 
  • 1/4 cup pearl barley, rinsed
  • 4 cups water
  • 1 cinnamon stick
  • 1 thumb ginger, peeled and cut into 4 chunks
  • 1 Tablespoon honey (optional)

Instructions: 
  • Add all ingredients except honey in a medium saucepan.
  • Bring to a boil, then reduce heat to medium-low, cover loosely and let simmer for 40-50 minutes.
  • Strain out solids and add honey, stir to combine.
  • Drink immediately, or can be refrigerated for up to 2 days. (If drinking cold, some sediment may fall to the bottom, just stir it up again prior to drinking)
