Rub a little olive oil on each flatbread and sprinkle with salt/pepper.
Bake on middle rack for 4-7 minutes, or until slightly crispy.
When flatbread is done, remove from oven and set aside and move rack to top position.
Heat a drizzle of olive oil in a medium skillet over med-high heat.
Add chicken, peppers and a little salt/pepper and saute until chicken is done.
Add BBQ sauce and mix well, remove from heat.
Spread mixture evenly over flatbreads and top with cheeses.
Return to oven for 2-5 minutes, or until heated through and cheese is melted.
Drizzle with ranch dressing and serve!
