BBQ Chicken Ranch Flatbread

Servings: 2
Time: 40 minutes

Ingredients: 
  • 2 9-10" flatbreads
  • Olive oil
  • 10-12 ounces chicken breasts (cut into strips)
  • 1 poblano pepper, chopped
  • 1/2 cup BBQ sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded white cheddar
  • 1/3 cup Ranch dressing
  • Salt/Pepper, to taste

Instructions: 
  • Heat oven to 425F.
  • Rub a little olive oil on each flatbread and sprinkle with salt/pepper.
  • Bake on middle rack for 4-7 minutes, or until slightly crispy.
  • When flatbread is done, remove from oven and set aside and move rack to top position.
  • Heat a drizzle of olive oil in a medium skillet over med-high heat.
  • Add chicken, peppers and a little salt/pepper and saute until chicken is done.
  • Add BBQ sauce and mix well, remove from heat.
  • Spread mixture evenly over flatbreads  and top with cheeses.
  • Return to oven for 2-5 minutes, or until heated through and cheese is melted.
  • Drizzle with ranch dressing and serve!
