BBQ Salad

DIETS: LC VT
Servings: 4 as a main dish (8 as a side)
Time: 30 Minutes

Ingredients: 
  • 1/2 cup Buttermilk Ranch Dressing
  • 2 cups cooked cubed or shredded chicken meat (optional)
  • 1/2-3/4 cup of your favorite BBQ sauce
  • 8 Heaping cups mixed greens
  • 2 cups tortilla chips or Salad tortilla strips
  • 3-4 cups Black Bean and corn salsa (Store-bought, or ingredients to make your own below)
    • 1-15oz can black beans, rinsed & drained
    • 1/2 cup frozen corn kernels, cooked and drained
    • 1/2 red bell pepper, seeded and diced
    • 1/2 green bell pepper, seeded and diced
    • 1/4 red onion, finely diced
    • 2 Tablespoons cilantro, chopped
    • 1 Tablespoon olive oil
    • 1 Teaspoon red wine vinegar
    • Salt/Pepper, to taste

Instructions: 
  • Mix the Ranch dressing and BBQ sauce together until combined.
  • If making your own salsa, combine the beans, corn, peppers, onion, cilantro, oil & vinegar in a medium bowl. Season with salt and pepper and toss to combine. (This can be made up to 1 day in advance)
  • Divide the greens between 4 bowls/plates.
  • Top with dressing/bbq mixture, chicken, salsa, avocados and tortilla chips/strips.
  • Serve immediately!
