Ingredients:
1/2 cup Buttermilk Ranch Dressing
2 cups cooked cubed or shredded chicken meat (optional)
1/2-3/4 cup of your favorite BBQ sauce
8 Heaping cups mixed greens
2 cups tortilla chips or Salad tortilla strips
3-4 cups Black Bean and corn salsa (Store-bought, or ingredients to make your own below)
1-15oz can black beans, rinsed & drained
1/2 cup frozen corn kernels, cooked and drained
1/2 red bell pepper, seeded and diced
1/2 green bell pepper, seeded and diced
1/4 red onion, finely diced
2 Tablespoons cilantro, chopped
1 Tablespoon olive oil
1 Teaspoon red wine vinegar
Salt/Pepper, to taste
Instructions:
Mix the Ranch dressing and BBQ sauce together until combined.
If making your own salsa, combine the beans, corn, peppers, onion, cilantro, oil & vinegar in a medium bowl. Season with salt and pepper and toss to combine. (This can be made up to 1 day in advance)
Divide the greens between 4 bowls/plates.
Top with dressing/bbq mixture, chicken, salsa, avocados and tortilla chips/strips.
Serve immediately!
