Bean & Bacon Bake

Ingredients: 
  • 1/2 lb. bacon, cut into 3/4 inch pieces
  • 3 (15.5oz) cans Butter Beans, drained
  • 1 (2oz) jar sliced pimiento, drained
  • 1 cup chopped green onions, 2 Tablespoons of the green tops reserved
  • 3/4 cup dairy sour cream
  • 1/3 cup firmly packed brown sugar
  • 1 1/2 teaspoons dry mustard
  • 1 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper

Instructions: 
  • Heat oven to 350F. Cook bacon in large skillet until crisp; drain. Set aside. In large bowl, combine all remaining ingredients except reserved green onion tops; mix well. Pour into ungreased 9 Inch square baking dish or 2 quart casserole.
  • Bake uncovered at 350F for 25 min. Sprinkle with cooked bacon and reserved green onion tops; bake an additional 10-15min or until thoroughly heated.
