Bean, Potato and Sausage Soup

Servings: 6
Time: 30 min prep, 4-5 hours in the slow cooker

Ingredients: 
  • 1 medium onion, chopped
  • 2 medium potatoes, cubed
  • 2 large carrots, chopped
  • 2 stalks celery, chopped
  • 1 - 14oz can pinto beans, rinsed & drained
  • 2 - 14oz cans beef broth
  • 3 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon liquid smoke
  • 1 Tablespoon white wine vinegar
  • 1/2 lb cooked smoked sausage, chopped

Instructions: 
  • Add all ingredients to a slow cooker and stir well.
  • Cover and cook on high for 4-5 hours.
