Bean-y Joes

Ingredients: 
  • 1 cup uncooked lentils
  • 4 cups water
  • 1-15oz can condensed tomato soup (vegan if desired)
  • 1/4 cup brown sugar
  • 1/4 cup yellow mustard
  • 2 Tablespoons ketchup
  • 4 Hamburger buns
  • Sliced pickles for topping

Instructions: 
  • To a medium saucepan add lentils and water.
  • Cover and bring to a boil, then reduce heat to medium-low and simmer for 20 minutes or until soft.
  • Drain and return to saucepan.
  • Add tomato soup, brown sugar, mustard and ketchup and mix well. Simmer on medium-low for 5-10 minutes or until desired thickness.
  • Divide mixture evenly among 4 buns, top with pickles and serve!
