Beans & Greens Salad

Packed full of healthy greans and beans!



Ingredients: 
  • 5 ounces baby mixed greens
  • 1 16oz can red kidney beans, drained
  • 1 16oz can cannellini beans, drained
  • 1 onion, chopped
  • 1/4 cup fresh basil, chopped
  • 2 Tablespoons fresh lemon juice
  • 1 Tablespoon white wine vinegar
  • 1 Tablespoon olive oil
  • 1 Tablespoon yellow mustard
  • Salt/Pepper, to taste

Instructions: 
  • Mix greens, beans, onion and basil in a large bowl
  • Combine lemon juice, vinegar, oil,  mustard and salt/pepper in a jar.  Cover and shake vigorously.
  • Pour dressing over salad and toss to combine
