Best Baked Potatoes

DIETS: LC GF VG VT
Servings: 4

​Ingredients: 
  • 4 russet/baking potatoes, unpeeled
  • 1 Tablespoon olive oil
  • Salt & Pepper

Instructions: 
  • Heat oven to 450F, and make sure rack is in center position.
  • Lightly prick potatoes with fork in about 6 places.
  • Dissolve 2 Tablespoons salt in 1/2 cup water in large bowl. 
  • Dip potatoes in bowl of salt water and cover on all sides.
  • Put potatoes on a wire rack set in a rimmed baking sheet.
  • Bake for 45 minutes - 1 hour (until center of biggest potato is around 205 degrees).
  • Remove potatoes from oven and brush tops and sides with oil.  Return to oven and bake another 10 minutes. 
  • Remove from oven and serve immediately. Top as desired.
