1 boneless 6 ounce chicken breast (optional) - cooked and cubed or shredded
1/2 tomato, diced
1/2 onion, diced
1 Tablespoon fresh lime juice
1 Tablespoon fresh cilantro, chopped
1/2 jalapeno, minced
Cumin, to taste
Salt, to taste
1 cup cooked brown rice
1 cup canned black beans, rinsed and drained (use seasoned black beans for additional flavor)
1/4 cup guacamole
1/4 cup shredded cheddar cheese (optional)
Instructions:
Preheat oven to 375 degrees F.
Lightly spray baking sheet with cooking spray. Spread the corn on the sheet and roast until golden brown (about 15 minutes).
Combine roasted corn with tomato, onion, lime juice, cilantro, jalapeno, cumin and salt.
Cook rice and chicken. Warm beans.
Assemble bowls by spooning rice, beans, chicken (if using), corn salsa and guacamole into 2 bowls. Top with cheese, if desired.
