Black Bean Bowl

DIETS: LC GF
Serves 2

Ingredients: 
  • Cooking spray (canola or olive oil is preferred)
  • 1/2 cup frozen corn kernels
  • 1 boneless 6 ounce chicken breast - cooked and cubed or shredded
  • 1/2 tomato, diced
  • 1/2 onion, diced
  • 1 Tablespoon fresh lime juice
  • 1 Tablespoon fresh cilantro, chopped
  • 1/2 jalapeno, minced
  • Cumin, to taste
  • Salt, to taste
  • 1 cup cooked brown rice
  • 1 cup canned black beans, rinsed and drained (use seasoned black beans for additional flavor)
  • 1/4 cup guacamole
  • 1/4 cup shredded cheddar cheese (optional)

Instructions: 
  • Preheat oven to 375 degrees F.
  • Lightly spray baking sheet with cooking spray.  Spread the corn on the sheet and roast until golden brown (about 15 minutes).
  • Combine roasted corn with tomato, onion, lime juice, cilantro, jalapeno, cumin and salt.  
  • Cook rice and chicken. Warm beans.
  • Assemble bowls by spooning rice, beans, chicken (if using), corn salsa and guacamole into 2 bowls.  Top with cheese, if desired.
