Black Bean Burger

Nutrition info is for burgers only - no bun or toppings.
These are REALLY good with Chipotle Mayo, Avocado and Salsa!

Ingredients: 
  • 2 Tablespoons olive oil (plus more for frying burgers)
  • 1 onion, finely diced
  • 1 green pepper, finely diced
  • 2 large cloves garlic, minced
  • 2 cups cooked black beans (or 1-15oz can, drained)
  • 1/2 cup psyllium husk powder
  • 1/2 cup plain bread crumbs
  • 2 Tablespoons lime juice
  • 1 Tablespoon mayo (vegan, if desired)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/2 cup water
  • Hamburger buns, if desired
  • Desired toppings: Chipotle Mayo, Salsa, Guacamole/Avocado, lettuce, onion, etc

Instructions: 
  • Heat oil in a skillet over medium-high heat and saute onion, green pepper and garlic until soft (5-8 minutes). Remove, cool slightly and wipe out pan.
  • Mash the beans with a fork in a medium bowl (mash up until some halves of beans remain, but no or few whole beans).
  • In a separate small bowl, mix the lime juice, mayo, oregano, cumin and salt until well mixed.
  • To the bowl with the beans, add the psyllium husk powder, bread crumbs, onion/pepper mixture, Mayo mixture and 1/2 cup water.
  • Mix with a fork or spoon, then knead with your hands until mixture is firm and fully mixed (about 1 minute).
  • Divide the burger mixture into 6 equal pieces and form into patties about 1" thick.
  • Add a thin layer of oil to the skillet that vegetables were cooked in and preheat over medium heat.
  • Cook patties until browned and cooked through - about 5 minutes per side.
  • Serve warm on buns and/or with toppings as desired.
