3 cups cooked rice (made with broth instead of water - any flavor broth will work)
1/4 cup butter
1 small onion, chopped
1/2 pound of bacon, cut into 1" pieces
2 cups torn fresh spinach
2 Tablespoons freshly grated Parmesan cheese
1/2 teaspoon salt
1 teaspoon hot pepper sauce
1 cup shredded cheddar cheese
Instructions:
Drain black-eyed peas and set aside.
Make rice according to package directions (but use broth instead of water).
When rice is almost done, melt the butter in a large skillet over medium heat.
Add chopped onion and bacon pieces and saute until bacon starts to get crispy and onion is tender (about 10 minutes).
Add spinach and saute until wilted (just a few minutes).
Add in rice, beans, Parmesan, salt and hot pepper sauce and mix well. Heat until warmed through.
Just before serving, top with cheddar cheese.
