Black-Eyed Peas & Rice

Ingredients: 
  • 1 - 15oz can black-eyed peas
  • 3 cups cooked rice (made with broth instead of water - any flavor broth will work)
  • 1/4 cup butter
  • 1 small onion, chopped
  • 1/2 pound of bacon, cut into 1" pieces
  • 2 cups torn fresh spinach
  • 2 Tablespoons freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1 teaspoon hot pepper sauce
  • 1 cup shredded cheddar cheese

Instructions: 
  • Drain black-eyed peas and set aside.
  • Make rice according to package directions (but use broth instead of water).
  • When rice is almost done, melt the butter in a large skillet over medium heat.
  • Add chopped onion and bacon pieces and saute until bacon starts to get crispy and onion is tender (about 10 minutes).
  • Add spinach and saute until wilted (just a few minutes).
  • Add in rice, beans, Parmesan, salt and hot pepper sauce and mix well.  Heat until warmed through.
  • Just before serving, top with cheddar cheese.
