BLT Pasta Salad

Serves about 10 as a side.  
*To shave about 50 calories off per serving, use low fat or fat free mayo and sour cream! 
Time: about 40 minutes

Ingredients: 
  • 8 ounces elbow macaroni (uncooked)
  • 6 slices bacon
  • 3 medium tomatoes, seeded and diced
  • 3 cups shredded lettuce
  • Dressing:
    • 1/3 cup sour cream
    • 1/2 cup mayo
    • 1 Tablespoon Dijon mustard
    • 1 teaspoon sugar
    • 2 teaspoons cider vinegar
    • Salt & Pepper to taste

Instructions: 
  • Cook pasta according to package directions.  When done cooking rinse with cold water until cooled through. 
  • Cook and crumble bacon. 
  • Mix all dressing ingredients in a small bowl. 
  • Combine macaroni, bacon, tomatoes & lettuce in a large bowl and mix well. 
  • Fold in the dressing and toss to combine.
  • Serve immediately or refrigerate for later.
