Blue Cheese-Chive Butter

This versatile butter can be used to spice up almost anything!!   Some ideas: 
  • Add to pasta's, rice, couscous, quinoa, etc
  • Add to cooked veggies
  • Add a dollop on top of cooked meat (steak, chicken, pork chops)
  • Spread on bread, rolls, biscuits, croissants
  • Add to soups

DIETS: LC GF KT VT
Servings: Makes 1 cup (about 16 - 1 Tablespoon size servings)
Time: 1.5 hours

Ingredients:
  • 1 cup butter, softened
  • 7.5 oz blue cheese, room temp
  • 2/3 cup chives, minced
  • Salt, to taste

Instructions:
  • Fold all ingredients together and mix well. 
  • Chill for at least an hour to let flavors meld.   
  • They can also be frozen by rolling the butter into a cylinder shape in wax paper.  Put in a zip lock bag and freeze.  When ready to use, just slice off the amount you need!
