Breakfast Bruschetta

Serves 8

Ingredients: 
  • 2" wide French baguette
  • 1/4 cup butter
  • 1 teaspoon garlic powder
  • 2 cups eggs
  • 2 plum tomatoes, chopped
  • 1/2 cup chopped basil (fresh)
  • Salt & Pepper

Instructions: 
  • Preheat oven to 450F.
  • Cut baguette into 1/2" thick slices.
  • Spray 2 large baking sheets with nonstick spray and place bread on sheets.            
  • Melt butter, and brush each slice of bread. Sprinkle with garlic powder.
  • Bake about 8 min until crispy.
  • Meanwhile, in large skillet sprayed with nonstick spray, heat to med-high. Add eggs and scramble until mostly cooked.
  • Add tomatoes and basil and continue to scramble until fully cooked, about 1 min.
  • Top bread with egg mixture, season with salt & pepper.
