Ingredients:
8 strips bacon
3 Tablespoon butter
8 large eggs
1/4 cup milk
3 Tablespoons chopped chives
Salt/Pepper, to taste
16 egg roll wrappers
6 ounces shredded sharp cheddar cheese
Vegetable oil for frying
Instructions:
Make bacon by lining a large cookie sheet with tin foil, then place a wire rack inside and lay out bacon on the rack, making sure the strips don't touch. Put in a cool oven, set the temp to 400F, and cook for about 20 minutes until crispy. Remove to a paper towel-lined tray to drain.
Make eggs by melting butter in a large skillet. Beat together eggs, milk, chives, salt and pepper and pour into pan. Stir/scramble eggs until almost done (they should be slightly undercooked). Remove from pan and set aside.
Assemble egg rolls by splitting the egg mixture between the 16 rolls. Top each with the cheese and 1/2 of 1 bacon slice. Roll up according to package directions (sealing the edges with a little water).
Place in a container and freeze overnight.
When ready to serve, heat oil in a deep fryer to 350F. Deep fry egg rolls for 3-5 minutes, or until golden brown. Remove to drain on a paper towel-lined plate.
Serve warm.
