Breakfast Frittata

DIETS: LC GF KT
Serves: 6
Time: 30 minutes

Ingredients: 
  • 1 Tablespoon butter
  • 3 links precooked chicken sausage, diced
  • 1 1/2 cups fresh spinach, stems removed and chopped
  • 6 large eggs, beaten
  • 2 Tablespoons heavy cream
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon turmeric powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions: 
  • Preheat oven to 375F.
  • In medium bowl whisk eggs, cream, and seasonings and set aside.
  • Melt butter over med-high heat in large oven-proof skillet or cast iron pan. Brown chicken sausage.
  • Add spinach and cook for a few minutes until wilted.
  • Pour in egg mixture and mix together. Transfer to oven and bake for approximately 20 minutes or until eggs are cooked through in the middle.
  • Serve immediately or let cook and store in fridge for up to 4 days.
