Broccoli-Stuffed Manicotti

Ingredients: 
  • 10 Uncooked Manicotti Noodles
  • 1 cup light ricotta cheese
  • 1 cup frozen broccoli cuts
  • 1/4 cup plus 2 Tablespoons Parmesan cheese
  • 1/4 cup chopped onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups prepared spaghetti sauce
  • 1 teaspoon dried basil
  • 2 garlic cloves, crushed

Instructions: 
  • Heat oven to 350F. Cook manicotti noodles to desired doneness as directed on package. Drain; rinse with hot water. Pat dry.
  • Steam or boil broccoli (according to package instructions) until crisp-tender.  Drain.
  • In medium bowl, combine ricotta, broccoli, 1/4 cup Parmesan, onion, salt and pepper; mix well.
  • Fill each cooked manicotti noodle with 1-2 Tablespoons filling mixture.
  • Place in ungreased 12x8" (2qt) baking dish.
  • In small bowl, combine spaghetti sauce, basil and garlic; mix well. Spoon sauce over filled noodles; cover. Bake at 350 for 30-40min until thoroughly heated.
  • Sprinkle with 2 Tablespoons Parmesan cheese; let stand uncovered 2 min.
