Bruschetta

DIETS: LC VG VT
Makes 20 individual appetizers

Ingredients: 
Topping:
  • 5 tomatoes, finely diced
  • 1/2 onion, finely chopped
  • 1/4 cup minced fresh basil
  • 3 small cloves garlic, minced
  • 2 Tablespoons extra-virgin olive oil
  • 1 Tablespoon balsamic vinegar
  • 1/2 teaspoon salt
Bread:
  • 20 slices baguette bread (about 1/2" thick)
  • Olive oil
  • Grated Parmesan cheese (optional)
  • Salt, to taste

Instructions: 
  • Add all topping ingredients in a medium bowl. Mix well, cover and chill 1 hour.
  • When ready to serve, preheat oven to 350F.
  • Arrange the bread slices on a baking sheet.  Drizzle with olive oil and sprinkle with Parmesan and salt.  Bake for 6-8 minutes or until the bread starts to crisp.
  • Pour tomato mixture in serving dish (strain off excess liquid).  Serve it up alongside the toasted bread slices.
