Buffalo Chicken Tacos Keto-Style

Serves: 4
Time: 30 minutes

Ingredients: 
  • 2 Tablespoons mayonnaise
  • 1 Tablespoon buttermilk
  • 2 ribs celery, thinly sliced
  • 2 cups shredded rotisserie chicken
  • 3 Tablespoon Buffalo sauce/hot sauce
  • 2 Tablespoons butter
  • 1/4 cup crumbled blue cheese
  • 8 small keto tortillas (or 4-8”keto tortillas) – shoot for 4 net carbs or less

Instructions: 
  • Mix mayo, buttermilk and celery in a bowl, season with salt & pepper and set aside (this is the "slaw").
  • In another bowl, microwave chicken, hot sauce and butter on high until warm - about 2 minutes. (or put all the ingredients in a saucepan and heat on medium heat until warmed - add a little water or broth if it gets too dry).
  • Assemble tacos by adding chicken mixture to warmed tortillas, top with slaw mixture and blue cheese crumbles. Serve immediately.
