Soak cashews in cold water for at least 2 hours (cover with 3 inches of water as they will expand). If pinched for time, can also soak for 5 minutes in hot water, but the slow-soak method yields a creamier texture.
Drain cashews and add with all remaining ingredients to a blender or food processor.
Blend until no more chunks remain, scraping sides often.
Can be stored in the fridge for up to 5 days, or frozen for up to 2 months.
