Cashew 'Ricotta' Cheese

DIETS: LC GF KT VG VT
Servings: 8 (makes about 2 cups)
Time: 2.5 hours

Ingredients: 
  • 1 1/2 cups raw cashews
  • 1/2 cup water
  • Juice of 1 large lemon
  • 2 large garlic cloves, minced
  • 1/2 teaspoon onion powder
  • Salt/pepper, to taste

Instructions: 
  • Soak cashews in cold water for at least 2 hours (cover with 3 inches of water as they will expand).  If pinched for time, can also soak for 5 minutes in hot water, but the slow-soak method yields a creamier texture.
  • Drain cashews and add with all remaining ingredients to a blender or food processor.
  • Blend until no more chunks remain, scraping sides often.
  • Can be stored in the fridge for up to 5 days, or frozen for up to 2 months.
