Cauliflower Risotto

Serves: 6 (as a side)
Time: 30 Minutes

Ingredients: 
  • 10 ounce bag frozen cauliflower rice, cooked
  • 10 strips of bacon, cooked & crumbled
  • 3 Tablespoons reserved bacon grease, or olive oil
  • 8 ounces mushrooms, sliced
  • 1 medium onion, chopped
  • 4 large garlic cloves, minced
  • 1/4 cup coconut cream
  • 1/4-1/2 cup chicken broth
  • Salt & pepper, to taste

Instructions: 
  • Heat bacon grease or olive oil in large skillet over medium heat. Add onions and mushrooms and cook until tender (about 5-7 minutes).
  • Add garlic and cook for an additional minute.
  • Add all remaining ingredients except bacon and mix well (start with 1/4 cup broth and add more if needed). Cook, stirring frequently, until everything is warmed through (about 5 minutes).
  • Remove from heat and top with bacon crumbles. Serve immediately.
