Cauliflower Salad

DIETS: GF KT VT
Serves 6
Time: 1.5 hours

Ingredients: 
  • 1 large cauliflower
  • Salt & Pepper, to taste
  • 3 hard-boiled eggs, diced
  • 3/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup dill pickle, diced
  • 3 celery stalks, diced
  • 1 Tablespoon apple cider vinegar
  • 1 teaspoon garlic powder

Instructions: 
  • Remove stem from cauliflower and cut into bite-sized florets.
  • Put 2 inches of water in a large pot, add a pinch of salt, and bring to a boil. Add the cauliflower, reduce heat to low, and cover. Steam the cauliflower for 10 minutes.
  • Drain the cauliflower and let cool for 15 minutes.
  • Mix the remaining ingredients in a large bowls. Add cooled cauliflower and mix well.
  • Cover and refrigerate for 1-2 hours until chilled. Serve cold.
