Cheesecake Bars

Time: 1 hour

Ingredients: 
Crust:
  • 1 cup flour
  • 1/2 cup firmly packed brown sugar
  • 1/3 cup butter, softened
  • 1/2 cup chopped walnuts or pecans
Topping:
  • 8oz package cream cheese, softened
  • 1/4 cup sugar
  • 1 egg
  • 2 Tablespoons milk
  • 2 Tablespoons lemon juice
  • 1/2 teaspoon vanilla

​Instructions: 
  • Heat oven to 350F.
  • In medium bowl combine flour, brown sugar and butter. Beat at low speed, scraping bowl often, until mixture is crumbly (2-3min).
  • Stir in nuts by hand and reserve 1 cup of mixture for topping.
  • Press remaining mixture on bottom of 8" square baking pan. Bake for 8-10 min or until lightly browned.
  • Meanwhile, in another medium bowl combine all filling ingredients. Beat at medium speed, scraping bowl often, until smooth (4-5min).
  • Pour topping mixture over hot crust. Sprinkle with reserved crumb mixture. Continue baking for 23-30 min or until golden brown.
  • Cool: cut into bars. Store refrigerated.
