Chicken Gorgonzola Crostini

Servings: 12
Time: 45 minutes

Ingredients: 
  • 12 slices french bread rounds
  • 1/4 cup olive oil
  • Garlic salt, to taste
  • 2 chicken breasts, cooked and cubed
  • 8 ounces Gorgonzola cheese crumbles
  • 8 ounces cream cheese, softened
  • salt, to taste
  • 1/2 cup walnuts, chopped
  • 1/2 cup green onions, sliced (reserve a few of the green tops to garnish at the end)
  • 1/2 cup dried cranberries

Instructions: 
  • Preheat oven to 400F and place rack in top position
  • In a medium bowl, mix chicken chunks, walnuts, green onions and cranberries
  • In a separate small bowl, mix Gorgonzola, cream cheese and a sprinkle of salt with a hand mixer until smooth
  • Add cream cheese mixture to chicken mixture and blend well
  • Brush olive oil on both sides of bread rounds, sprinkle with a little garlic salt and place on a large cookie sheet
  • Bake at 400F until bread is lightly browned, but not completely toasted (just a few minutes)
  • Remove from oven and spread cream cheese mixture on bread rounds.
  • Put oven on broiler setting and broil rounds on top rack until cheese is bubbling (1-2 minutes)
  • Sprinkle with green onions and serve
