Fresh parsley and/or lemon slices for garnishing (if desired)
Instructions:
Mix together flour, baking soda, salt & pepper.
Dip chicken in 1 beaten egg, then flour mixture and coat evenly.
Melt 1/4 cup butter in large skillet over medium heat and saute chicken for 6-7 minutes per side or until cooked through.
Remove chicken from pan and keep warm.
While chicken cooks, make sauce by combining 6 egg yolks and lemon juice in a blender or food processor. Mix until combined.
With the motor running, slowly add melted hot butter in a thin stream (sauce will thicken as you pour the butter in). Once all butter is added, turn off motor. Lightly stir in the hot sauce.
Pour sauce over chicken (or serve on the side)
Garnish with fresh parsley and/or lemon slices, if desired
