A GREAT breading for virtually anything - adapted from 1 of my favorite cookbooks:
Northern Soul
If using with brined meat, reduce the salt by half
Dip whatever you want breaded into this mixture, then buttermilk, then back into this mixture for a super crispy breading!
DIETS: LC VG VT
Makes 4 cups (16 1/4-cup servings)
Time: 10 minutes
Ingredients:
3 cups all-purpose flour
1/4 cup cake flour
3 Tablespoons smoked paprika
1.5 Tablespoons black pepper
2 Tablespoons salt
1.5 Tablespoons garlic powder
1.5 Tablespoons onion powder
1/2 teaspoon cayenne pepper
Instructions:
Mix all ingredients together until well blended.
Can be stored in a cool dry place for up to 4 weeks.
