Chicken or Fish Breading

A GREAT breading for virtually anything - adapted from 1 of my favorite cookbooks: Northern Soul
  • If using with brined meat, reduce the salt by half
  • Dip whatever you want breaded into this mixture, then buttermilk, then back into this mixture for a super crispy breading!

DIETS: LC VG VT
Makes 4 cups (16 1/4-cup servings)
Time: 10 minutes

Ingredients: 
  • 3 cups all-purpose flour
  • 1/4 cup cake flour
  • 3 Tablespoons smoked paprika
  • 1.5 Tablespoons black pepper
  • 2 Tablespoons salt
  • 1.5 Tablespoons garlic powder
  • 1.5 Tablespoons onion powder
  • 1/2 teaspoon cayenne pepper

Instructions:
  • Mix all ingredients together until well blended.
  • Can be stored in a cool dry place for up to 4 weeks.
