Serves 6 This delicious casserole is easy, economical and can easily incorporate substitutes to use up leftover chicken, vegetables, Thanksgiving leftovers, etc!
Ingredients:
2 celery ribs, chopped
1 medium onion, chopped
2 cups (approximately) broccoli florets, cut into bite-sized pieces (can also substitute cauliflower, Brussels sprouts, green beans, etc)
1/2 cup butter
14 ounces of seasoned stuffing croutons (this is 2 packages of stove-top brand), whatever flavor you like!
2 cups cooked chicken or turkey, cubed or shredded
2 eggs, beaten
2 cans chicken broth (approximately 2 - 15 oz cans)
1/2 teaspoon salt
1/4 teaspoon pepper
Store-bought (1 can) or homemade gravy for drizzling, if desired
Instructions:
Preheat oven to 350F.
In large skillet, melt butter and add celery, onion and broccoli. Saute until tender.
Meanwhile, in a large bowl combine eggs and broth and mix well. Add seasoned bread cubes/stuffing, cooked chicken or turkey, celery/onion/broccoli mixture and salt/pepper.
Mix gently and pour into greased 13x9" pan.
Cover with foil and bake for 40 minutes. Uncover and bake an additional 10-15 minutes or until heated through and browned on top.
While casserole bakes, heat up gravy in small saucepan and keep warm.
Serve immediately and drizzle with gravy, if desired.
This casserole reheats very well! Just re-cover it with foil and bake at 350F for 25-30 minutes or until heated through.
