Chicken or Turkey & Stuffing Casserole

Serves 6
This delicious casserole  is easy, economical and can easily incorporate substitutes to use up leftover chicken, vegetables, Thanksgiving leftovers, etc! 

Ingredients: 
  • 2 celery ribs, chopped
  • 1 medium onion, chopped
  • 2 cups (approximately) broccoli florets, cut into bite-sized pieces (can also substitute cauliflower, Brussels sprouts, green beans, etc)
  • 1/2 cup butter
  • 14 ounces of seasoned stuffing croutons (this is 2 packages of stove-top brand), whatever flavor you like!
  • 2 cups cooked chicken or turkey, cubed or shredded
  • 2 eggs, beaten
  • 2 cans chicken broth (approximately 2 - 15 oz cans)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Store-bought (1 can) or homemade gravy for drizzling, if desired

Instructions: 
  • Preheat oven to 350F.
  • In large skillet, melt butter and add celery, onion and broccoli.  Saute until tender. 
  • Meanwhile, in a large bowl combine eggs and broth and mix well.  Add seasoned bread cubes/stuffing, cooked chicken or turkey, celery/onion/broccoli mixture and salt/pepper.  
  • Mix gently and pour into greased 13x9" pan.
  • Cover with foil and bake for 40 minutes.  Uncover and bake an additional 10-15 minutes or until heated through and browned on top.
  • While casserole bakes, heat up gravy in small saucepan and keep warm. 
  • Serve immediately and drizzle with gravy, if desired.
  • This casserole reheats very well!  Just re-cover it with foil and bake at 350F for 25-30 minutes or until heated through.
