4 slices bread of choice (sourdough/ciabatta, or vegan/gluten free if desired)
1 Tablespoon butter
Sandwich toppings of choice: mustard, lettuce, tomato, onion, etc.
Instructions:
In a small bow, combine mayo, sour cream, mustard, miso, garlic powder, sugar, lemon juice and salt/pepper (to taste)
Place chickpeas in a medium bowl and mash until desired consistency
Add to the chickpeas green onions, half the mayo mixture and dill and mix well
Melt butter in a large pan over medium heat
Add the bread and toast until golden (2-3 minutes per side)
Spread half of the bread sliced with the remaining mayo mixture
Top with chickpea salad, any other desired toppings and the other slice of bread
Serve immediately
