Chickpea Salad Sandwich

DIETS: GF VG VT
Makes 2 Sandwiches
 
Ingredients: 
  • 1 15oz can chickpeas, rinsed & drained
  • Juice from 1/2 a lemon
  • 2 green onions, chopped
  • 1 Tablespoon fresh dill
  • 1/4 cup mayo (vegan if desired)
  • 1  1/2 Tablespoons sour cream (vegan if desired)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon white miso (gluten free if desired)
  • 1 teaspoon garlic powder
  • 1/4 teaspoon sugar
  • Salt/Pepper to taste
  • 4 slices bread of choice (sourdough/ciabatta, or vegan/gluten free if desired)
  • 1 Tablespoon butter
  • Sandwich toppings of  choice: mustard, lettuce, tomato, onion, etc.
 
Instructions: 
  • In a small bow, combine mayo, sour cream, mustard, miso, garlic powder, sugar, lemon juice and salt/pepper (to taste)
  • Place chickpeas in a medium bowl and mash until desired consistency
  • Add to the chickpeas green onions, half the mayo mixture and dill and mix well
  • Melt butter in a large pan over medium heat
  • Add the bread and toast until golden (2-3 minutes per side)
  • Spread half of the bread sliced with the remaining mayo mixture
  • Top with chickpea salad, any other desired toppings and the other slice of bread
  • Serve immediately
