5 serrano chili peppers, seeds removed and chopped
2 jalapeno peppers, seeds removed and chopped
4-14 ounce cans diced tomatoes
6 ounce can tomato paste
8 ounce can tomato sauce
1 cup beef broth
1 beef bouillon cube or 1 Tablespoon concentrate
2 Tablespoons parsley, chopped
2 Tablespoons cilantro, chopped
2 Tablespoons basil, chopped
2 Tablespoons chili powder
1 1/2 Tablespoons cumin
1/2 Tablespoon dried oregano
1/2 teaspoon Ac'cent
1 bay leaf
6 ounces beer
Instructions:
In a large stockpot, add the ground beef and sausage and cook over medium heat until lightly browned.
Add onion, garlic, celery and green pepper and cook for 10 minutes, stirring frequently.
Add the serrano and jalapeno peppers and cook for another 10 minutes, stirring frequently.
Add the diced tomatoes, tomato paste, tomato sauce, beef broth and bouillon and simmer for 30 minutes, stirring frequently.
Add all remaining ingredients and mix well. Simmer this on very low heat for 6 hours, stirring every 20 minutes. (Can expedite this step by cooking for 2 hours over medium heat instead - just stir often so it doesn't burn to the bottom).
