1 package (6oz) chow mein noodles (reserve 1/2 for topping)
Instructions:
Preheat oven to 350F.
Heat olive oil in large skillet over med-high heat.
Add meat and onion and a sprinkle of salt and saute until meat is browned and onions are tender.
Bring 1 cup water to a boil and add rice and celery. Cover, reduce heat to med-low and simmer for 15-20 minutes (or according to package directions).
Once meat and rice are done, add to all remaining ingredients and half of the chow mein noodles. Mix well.
Transfer to a 9x13 baking pan or casserole dish and bake for 1 hour.
Sprinkle with remaining chow mein noodles and bake for an additional 30 minutes.
