Chinese Peanut Salad (V, GF)

Servings: 4 side salads

​Ingredients: 
  • 1/2 cup store-bought peanut sauce or dressing
  • 1 cup fresh snow peas (chopped into bite-size pieces)
  • 1 5oz bag spring mix
  • 2 carrots, peeled and grated
  • 1/4 cup (about 1) green onion, thinly sliced
  • 1/4 cup fresh cilantro leaves
  • 1/2 cup chopped peanuts

Instructions: 
  • Mix all ingredients in a large bowl and toss to coat.
