Chocolate Caramels

DIETS: LC GF VT

Ingredients: 
  • 1 package caramels, unwrapped
  • 1 lb chocolate flavored candy coating
  • 4 teaspoons shortening
  • 1/2 cup chopped pecans

Instructions: 
  • Unwrap all caramels and set aside.
  • Line a baking sheet with wax paper and set aside.
  • Combine the chocolate and shortening and melt over med-low heat. Once melted, stir in the pecans.
  • Dip each caramel into chocolate mixture (with a spoon) to coat. Drop dipped caramels onto prepared baking sheet. Let candy cool until set.
  • Store in airtight container or plastic food-storage bag.
