Great on it's own, or use in shrimp tacos or over seasoned rice! Serves 3-4
1 pound medium shrimp, thawed, peeled and deveined
Juice from 1 lime (about 2 Tablespoons)
1/4 teaspoon ground ginger
1/2 teaspoon ground cumin
3 garlic cloves, minced
2 Tablespoons olive oil
1/4 cup cilantro, chopped
1/2 teaspoon lime zest
Salt & pepper to taste
Mix first 5 ingredients in a large bowl and stir to combine.
Heat oil in large skillet over med-high heat.
Shake excess liquid from shrimp and add to pan. Sauté until pink, opaque and cooked through (about 3 minutes on each side).
Remove from pan and add to bowl with remaining ingredients (cilantro, lime rind, salt & pepper).
Mix well and serve immediately.
