Cilantro Lime Shrimp

Great on it's own, or use in shrimp tacos or over seasoned rice!
​Serves 3-4

Ingredients: 
  • 1 pound medium shrimp, thawed, peeled and deveined
  • Juice from 1 lime (about 2 Tablespoons)
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground cumin
  • 3 garlic cloves, minced
  • 2 Tablespoons olive oil
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon lime zest
  • Salt & pepper to taste

Instructions: 
  • Mix first 5 ingredients in a large bowl and stir to combine.  
  • Heat oil in large skillet over med-high heat.  
  • Shake excess liquid from shrimp and add to pan.  Sauté until pink, opaque and cooked through (about 3 minutes on each side). 
  • Remove from pan and add to bowl with remaining ingredients (cilantro, lime rind, salt & pepper). 
  • Mix well and serve immediately.
