Cinnamon Chips with Fruit Salsa

DIETS: VG VT
Serves approximately 10 as an appetizer
Time: approximately 45 minutes (plus chilling time)

Ingredients: 
  • 2 kiwis - peeled and diced
  • 2 Golden Delicious Apples - peeled, cored and diced
  • 8 ounces raspberries, diced
  • 1 pound strawberries, diced
  • 3 Tablespoons Raspberry preserves
  • 10-10 ounce flour tortillas
  • butter flavored cooking spray (or vegan cooking spray)
  • 1/3 cup cinnamon sugar

Instructions: 
  • Thoroughly mix kiwis, apples, raspberries, strawberries, and fruit preserves in a large bowl.  Cover and chill in the refrigerator at least 2 hours (can chill for 24-48 hours if desired).
  • Preheat oven to 350F. 
  • Coat one side of each tortilla with butter-flavored cooking spray.  Cut into wedges and arrange in a single layer on a large baking sheet.  Sprinkle wedges with cinnamon sugar.  Spray again with cooking spray. 
  • Bake in preheated oven until light brown and crispy, about 8-10 minutes.  Repeat with any remaining tortilla wedges.  Allow to cool approximately 15 minutes. 
  • Serve with chilled fruit mixture.
