1/2 cup plus 1 Tablespoon pure maple syrup, divided
2 large eggs
3/4 cup applesauce
1/2 cup buttermilk
1 teaspoon vanilla extract
1/2 cup ground flaxseed
2 cups all-purpose baking mix (Bisquick)
1/2 cup heavy cream
1/4 cup chopped pecans
Instructions:
Heat oven to 350F.
In small bowl, combine sugar and 1/4 tsp ground cinnamon; set aside. In large bowl, whisk together 1/2 cup maple syrup, eggs, apple sauce, vanilla and buttermilk.
Stir in flaxseed, baking mix and 1 teaspoon cinnamon; spoon into lined 12-well muffin pan.
Bake 12 minutes or until done; remove from pan. While muffins are still hot, sprinkle with cinnamon-sugar mixture.
Meanwhile, using mixer on med-high, beat heavy cream and 1 Tbsp maple syrup 1 min or until stiff peaks form. Pipe or dollop whipped cream onto muffins. Sprinkle with chopped pecans, if desired.
Serve muffins warm or at room temp.
