Cinnamon French Toast Muffins

Time:   30 minutes

Ingredients: 
  • 2 Tablespoons sugar
  • 1 1/4 teaspoons ground cinnamon, divided
  • 1/2 cup plus 1 Tablespoon pure maple syrup, divided
  • 2 large eggs
  • 3/4 cup applesauce
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup ground flaxseed
  • 2 cups all-purpose baking mix (Bisquick)
  • 1/2 cup heavy cream
  • 1/4 cup chopped pecans

​Instructions: 
  • Heat oven to 350F.
  • In small bowl, combine sugar and 1/4 tsp ground cinnamon; set aside. In large bowl, whisk together 1/2 cup maple syrup, eggs, apple sauce, vanilla and buttermilk.
  • Stir in flaxseed, baking mix and 1 teaspoon cinnamon; spoon into lined 12-well muffin pan.
  • Bake 12 minutes or until done; remove from pan. While muffins are still hot, sprinkle with cinnamon-sugar mixture.
  • Meanwhile, using mixer on med-high, beat heavy cream and 1 Tbsp maple syrup 1 min or until stiff peaks form. Pipe or dollop whipped cream onto muffins. Sprinkle with chopped pecans, if desired.
  • Serve muffins warm or at room temp.
