Combine rice and coconut milk in medium saucepan and bring to a boil.
Cover and reduce heat to medium-low. Simmer for 18-23 minutes, or until tender (add more water it dries out before rice is done).
Stir in salt, lime juice, lime zest and cilantro (if using) and fluff with a fork.
Serve immediately.
